The past couple of weeks have thrown up so much uncertainty for people and a lot of genuine concern for livelihoods. I’ve learned over the years ‘when the going gets tough, get out in nature’. I find it so soothing and being in nature is a haven & always creates pause.


Nature teams with life around us and serves as a comforting reminder that nature always finds a way. And it's not isn’t just about getting outdoors.


If you’re finding yourself in lock down open the windows, let the fresh breeze fill your home. Re pot your plants & appreciate their beauty. Bring yourself back to ‘rest & digest’ by breathing, lovely, long slow and deliberate breaths that will calm the nervous system. And get cooking with real, nourishing ingredients that will nurture your body.


Wild garlic, cashews, parmesan and olive oil

I took myself out to the woodland recently and picked wild garlic. It smells divine! There's so much goodness in wild garlic and to pick it fresh is such a privilege. (Like anything in nature don’t pick anything that looks sparse & always make sure you leave plenty). I sowed some of the wild garlic in my garden and washed the rest to make a delicious ‘wild garlic & cashew pesto’. This works amazingly with pasta, on roasted veggies, in a sandwich, or as a risotto... basically anything savoury! It is beyond simple to make too!

Ingredients: 1/2 cup Parmesan 1/2 cup cashews 1/2 cup olive oil 1.5 cups wild garlic Good pinch of salt Method: Add all the ingredients to a processor and whizz. Feel free to adjust the ingredients quantity to double the amount, to make it thicker or runnier, more nutty... whatever what you like it! It’s your pesto, so make it how you like it! 🌱
