One of the biggest stumbling blocks for some people wanting to eat healthy food can be the lack of confidence to try out new ideas and recipes because they are intimidated by cooking.

So here’s one of those recipes that will have you believing you’re the best baker since Mary Berry. So simple, nutritious and oh, so tasty, it really is a ‘chuck it all in recipe’ that takes minimal effort with maximum reward.


Sugarfree Trail Mix Muffins

These Trail Mix Muffins make a brilliant ‘breakfast-on-the-go’, or a lunch box snack, a hiking treat or a ‘something tasty’ after dinner.

The ingredients are popping with healthy fats, proteins, vitamins, minerals and loaded with gut supporting fibre.  You can eat these as soon as they’re cooled down from the oven or drizzle them in a sugarfree chocolate.

Sugar free, gluten free, paleo and vegan, here’s how to make these little crowd pleasers while boosting your baking prowess.

Ingredients:

2 bananas 1/4 cup Brazil nuts 1 GF cup oats 1/2 cup almond or peanut butter 1/4 cup pecan nuts 1/2 hemp seeds 1/3 cup pumpkin seeds 1/4 cup sour cherries 1/4 cup goji berries 1/4 cup flax seeds 1tso cacao powder 1/4 cup cashews 1tsp vanilla 1 tsp cinnamon 1/4 cup coconut chips

Method:

Here’s where it gets complicated...joking! It really couldn’t be more simple. 1. Pre heat the oven to 170.  Put all the ingredients in to the food processor and whizz. 2. Unsung an ice cream scoop, to scoop out the mixture in to separate portions on to grease proof paper. Use the back of a spoon to flatten down each portion a little. 3. Pop in the oven and bake for 15/20 mins. 4. Remove muffins from the oven and let cool down.  Either eat like this or drizzle with sugar free chocolate.
