Hazelnut & Chocolate Bread & Butter Pudding

Why not try this lovely nutty, chocolate twist on the classic bread and butter pudding, made with no added sugar.


When I set up Make Me Sugar Free one of the main objectives was to show people there is a way to cut out sugar and still eat mouthwatering delicious ‘treats’ that are made with wholesome and healthy ingredients. I wanted to recreate my favourite foods that are fortifying instead of the sugar laden fake-foods.


Here is one of those favs. Nothing screams comfort dessert more than a bread & butter pudding. And we know that Nutella tops the toast topper chart! So here’s a dessert that combines the two and is made using nothing but delicious, healthy, wholesome ingredients.


This is a mini portion tat serves two people, it’s super filling and hits the sweet spot perfectly.


Hazelnut & Chocolate Bread & Butter Pudding

This hazelnut chocolate bread & butter pudding will ease you in to the winter months & make the short, dark evenings cosy & delicious!


So simple to make - here goes:


Ingredients

  • 3 small slices slightly stale sourdough bread

  • 30g soft butter

  • 2 bananas mashed

  • 1 tsp unsweetened cocoa & cacao powder

  • Handful hazelnuts (toasted)

  • 2 eggs

  • 8 dates

  • 1 banana

  • 1 tin full fat coconut milk

  • 1 tbsp cinnamon

  • 1 tsp nutmeg


Method

  • First up butter your sourdough, cut in to quarters. Put half the bread in to a dish.

  • Next mash up one banana and top the bread in the dish. Then sprinkle with a tbsp if cacao & cocoa powder half and half  (it will be too bitter if just cacoa)

  • In a heavy bottomed pan toast your hazelnuts.

  • Once toasted crush them with the back of a spoon so they’re broken up.

  • Add to the bread & banana.

  • In a processor add the 2 eggs, dates, banana, coconut milk, nutmeg & cinnamon. Whiz until well combined.

  • Then pour half over the hazelnuts, keeping half back.

  • Next add another layer of buttered bread, more custard mix and top with hazelnuts and cacao.

  • Pop in the oven for 25 mins on 180 and there you have it a gorgeous, yummy, refined sugarfree delicious hazelnut chocolate bread & butter pudding.
