When we think of ‘comfort food’ it’s often the big carb overloaders like mac & cheese & the sugar laden recipes like bread & butter pudding or applepie with custard.
Next time you’re craving the big stodgy comforts give this a try. Here’s a recipe that conjures up all the same vibes as the the above comfort foods, less the stodge & sugar!
Super simple to make, incredibly delicious to eat and can be tweaked for nearly all diets. It’s such a friendly all inclusive ditty. I’ve called it a pudding but add more seeds, chia & a probiotic yogurt & this could be a perfectly good breakfast.
This is hassleback apple, topped with butter, omega mix seeds and cinnamon with a dollop of thick cream in the side. If you want to make it vegan (or dairy free) switch the butter for coconut oil & the cream for vegan yogurt. If you’re following WW’s or Slimming World diets you could add a sprinkle of water to a ramekin dish and sit the apples in it and cover over to stop it from drying out while cooking.
Here’s what you’ll need Ingredients: (serves 2) 2 x apples halved 1 knob butter 1/2 cup omega seed mix 1 teaspoon cinnamon 1 teaspoon sumac (optional) 1/2 cup whipped thick cream Method 1. Preheat the oven on 180. Halve the Apples, then lay each half flat on a chopping board cut slices into the apple halves, without cutting through completely, creating a fan like effect. 2. Divide the butter (or coconut oil) to each of the apples then sprinkle with the cinnamon, sumac and seeds. 3. Place on a baking tray in the oven (or in ramekins if using water) and bake for 20 mins. 4. Remove from the oven and add the whipped cream (or vegan/dairy free alternative) and serve. 5. Tuck in & enjoy 😉
