Who doesn’t like a muffin, especially when it’s refined sugar free and gluten free too. They can also be made vegan too by swapping out the eggs for flax eggs.
As usual, my shtick is all about bringing you coveted sweet treats but in a healthy, fortifying and of course ‘sugar free’ way.
All the ingredients used here offer fibre, nutrients, vitamins and minerals. There’s no nasties so you can eat them safe in the knowledge that you’re eating good, honest food. You have my word on that because when you eat these sublime ditties, you may likely forget!
These delectable Berry muffins ooze a jammy deliciousness that pours out when you bite in to them (be careful not to bite in to them when they’re still piping hot!). They have to be my absolute favourites to make and judging by my Instagram poll, you all seem to be in agreement too!
Enough of my yapping, I know you’ve been waiting so patiently... so here is the recipe (I’m sure I just heard a chorus of Angels). Enjoy xx
INGREDIENTS
Dry ingredients
2 tsp baking powder
1 tbs cinnamon
1.5 cup buckwheat flour
Wet
2 eggs, beaten
1/2 cup coconut oil, melted
2 ripe Bananas
1 tbsp vanilla
1/3 cup plant milk
8 dates soaked in hit water (then drained)
1/2 cup of frozen berries
METHOD
Pre heat the oven to 180.
In a blender/nutribullet add the drained dates, bananas, vanilla, coconut oil & milk and whizz until completely combined and dates are blended.
In a mixing bowl add the dry ingredients, make a well in the centre and start adding the blended wet ingredients a little at a time until fully incorporated.
Grease each of the holes in a muffin tray then fill each one with the mixture. Next take a handful of the frozen berries and place them in the centre of the mixture
Place in the oven for 20/25 mins until risen and the knife/tooth pick coming our clean when each muffin has been pricked.
