So wow... these are everything you'd ever want from a treat. They taste heavenly and are full of theist delicious, healthy ingredients. They’re gluten free, vegan and like always - no refined sugar!
Texturally, these guys hit the spot and they have the most satisfying crunchiness! I mean, I’m hardly reinventing the wheel combining orange and chocolate, but good God, I don’t need to as this flavour combo has my heart!
Did I also mention that they’re loaded with nutrients? Well, they are and they’re wonderfully protein rich too. So enough of my ramblings already and quick to the recipe! Enjoy
INGREDIENTS
10 medjool dates,
½ cup boiling water
1 cup buckwheat groats
4 tbsp cacao powder
3/4 cup desiccated coconut
3 tablespoons nut butter
2 tablespoons tahini
1 tsp vanilla
½ teaspoon ground cinnamon
pinch of sea salt
OPTIONAL 1/4 an orange, (cut in slices and dried in the oven on a low heat for 30 mins)
2 tablespoons cacao nibs
FOR THE COATING
4 tbsp cacao powder
½ cup desiccated coconut
Zest of half orange (optional)
METHOD
First up soak the dates in hot water for 10 minutes so they’re nice and soft.
Next add the buckwheat groats to a dry frying pan and gently toast until golden
brown.
When they’ve cooled, add them to a processor with the dates and half the water.
Add the dried orange slices, tahini, cinnamon, cacao powder, vanilla, coconut, cacao nibs, almond butter and a pinch of sea salt and whizz all together until a sticky mass.
Break off and roll into individual balls and dust with cacao & coconut.
Pop in the fridge in an airtight container these will be good for a week.
