Chocolate ginger biscuits - vegan and gluten free

All hail this stunning biscuit. It's as healthy as it is tasty and the perfect way to use up any avocados past their best. These started out their life as nutritious bliss balls when I wanted to use up left over avo's but then I remembered how good my avocado fudgey brownies tasted so I squished these little bliss balls in to discs with a spatula & popped them on grease proof paper and in to the oven.

One of the biggest triggers for a sugar fix can often be a cup of tea or coffee. For many people, whenever you have a brew it's a default to have a biscuit. This is one of the reasons why on my 21 Day Sugar Detox I advise you lay off caffeine, this is to break this habit and also because caffeine is thought to trigger the part of the brain that makes us have cravings.

But let's talk more about these biscuits, because they are such a crowd pleaser. Flavoured with organic ground ginger, which is renowned for its anti inflammatory properties and great for easing digestion, cacao powder which is rich in stress reducing magnesium, nerve soothing oats, protein dense chia seeds and vitamin E rich hazelnuts. Full of fibre, tasty and  divinely nutritious. Sometimes we do crave something nice to go with a cuppa, and these are a wonderful ‘something’

Oh and did I mention they’re ridiculously easy to make!

INGTREDIENTS

12 dates 1/4 cup hazelnuts 2 tablespoons of chia seeds 1/4 cup almond flour 1/4 coconut flour 1 avocado 4 tbsp cacao powder 3 tsp ginger powder (add more if you like ginger biscuits!) Pinch salt 1 x tablespoon vanilla Splash of oat milk to loosen

METHOD


Pre heat oven at 150c.  

Mix all the ingredients in a blender.  

Roll mixtures in to balls then flatten in to discs on to grease proof paper.

Place in the and bake for 45 mins at 150 - the loner you bake will determine the crunchiness of the biscuits.  

Mine were crunchy on the outside, but wonderfully soft in the middle!
