Holy Guacamole!

Avocado has to be one of the most incredible vegetables (or fruits, as its technically a fruit) this lovely planet could have possibly bestowed on us!

The health benefits are far too many to mention without it turning in to a science class…but by now we’re all aware that avocados are a cornucopia of health.

This green goddess is a secret weapon against premature ageing as they are loaded with vitamins A&E, key vitamins that keep skin nourished.

Sugar can have a very negative effect on your skin as I have written in a blog post here.

Avocado's also contain high levels of carotenoids that have wonderful anti-infamatory properties that help protect cells from ageing.

They contain more soluble fibre than any other fruit and more potassium than bananas as well as a serious amount of nutrients, high in omega 3 fatty acids that lower the risk of heart disease and regulate blood cholesterol levels.

And of course they taste amazing!

Combine Avocado with chilli, coriander, lime, garlic and tomatos and you get the most mouth watering dips - creamy, spicy, piquant and it's also one of the most amazingly immune boosting recipes you could eat!

I love to whip up guacamole to have with parmesan crisps or oat cakes… or dolloped on black beans.

It's the food of gods!!

INGREDIENTS

2 Avocados

1 red chilli

1 clove of garlic

2 tbsp chopped fresh coriander

Juice of 1 Lime

Pinch of salt

1 small red onion

3 medium tomatos

METHOD

Roughly chop the onion, chilli, garlic and tomatoes and add to a food processor along with the avocados.

Add the lime and pinch of salt and whiz until smooth - or less whizzing if you prefer a more chunky guac.

Serve as a side or a dip.
