This is a mug of pure 'love'. Make this the night before you go to bed and you will love yourself the next morning when you're tucking into it for your breakfast.
I'm a firm believer that the way you start your day sets you up for the rest of it. And when it comes to food this could not be more true of this breakfast.
For starters you've done all the prep the night before so you save yourself time in the morning which is always a bonus. Just whip out of the fridge and you're good to go.
It's also a great 'go to' snack if you are doing a sugar detox. Stick a big mug of this on your desk, leave a spoon in and you can graze away all morning to beat any cravings.
What this bowl of gorgousness contains will massively set you up for the rest of the day - it has so many power-house ingredients.
The humble porridge oat - packed to the gills with zinc, magnesium, vitamins B & E and phytochemical.
Then there's a delicious nut mix (see the recipe for Nuts about Nuts) of almonds, hazelnuts and walnuts that boast anti-inflammatory omega-3 essential fatty acids, biotin, copper, vitamin E, folate, potassium.
As if that's not enough, there's still the king of fibre, milled Linseed mixed in with chia seeds that boast protein and antioxidants, calcium and manganese.
And above all, its tases amazing.
So go on, give yourself a little of love and power up with this Overnight Porridge.
INGREDIENTS
Serves 2
100g Porridge Oats
200 mls Coconut Milk
2 tbsp of Blueberries
2 tbsp Milled Linseed / Hemp Seed
2 tbsp Desiccated Coconut
2 tbsp Chia Seeds
1/2 tsp vanilla Essence
1 tbsp mixed nuts
METHOD
Put all the dry ingredients, the vanilla extract and the blueberries in to a bowl or big mug then pour over the coconut milk. Give it a mix and leave it in the fridge overnight.
Take it out in the morning - top with more nuts/blueberries and a dollop of yogurt of you fancy.
