Raspberry crunch sundae

Going sugar free might at first feel like such a restriction... but I defy anyone to be presented with this and feel like they're not eating something delicious and naughty!

This really is sugar free!!

And it's certainly worth quitting sugar - just have a read of my blog post here and you'll agree there are simply so many health benefits it really does make sense.

There are so many amazing things you can still eat, while you reap the benefits of a sugar free diet.

This Crunch Fundae looks and tastes amazing, layered with 6 different toppings, crunchy and bursting with flavour.

It's also great as a breakfast or a dessert.

It takes no time to make and is healthy, and you don't feel like you're missing out when you have dishes like this.

For this recipe I blitzed hazelnuts and walnuts together with a sprinkling of cinnamon.

INGREDIENTS

8 heaped Greek Yogurt

20 Raspberries

Sprinkle of Cinnamon

4 x table spoons of Hazelnuts

4 x table spoons of Walnuts

6 blueberries for topping

Serves 2

METHOD

In a processer, blitz together the hazelnuts, walnuts and cinnamon.

Add half the raspberries to half the yogurt and crush together.

Take two cups and place 5 raspberries in the base of the cup, then layer with two tablespoons of greek yogurt, then with two tablespoons of the blitzed nuts.

Add another layer of the raspberry & yogurt crush, then a spoonful of greek yogurt and finally top with a sprinkling of nuts and blueberries.

Place in the freezer for 30 mins.
