When you give up sugar its important to look out for the sneaky 'simple carbohydrates' too such as white rice. White rice will give you a short burst of energy but will also cause an energy slump later.
It's about finding healthy alternatives, and while I like brown rice, its sometimes nice to be able to mix things up to keep meal times interesting.
I love making cauliflower rice and I would almost prefer it to normal rice now (I use this whenever I make my Butter Chicken). I was never a fan of cauliflower, but having it as rice has completely changed my opinion of it!
It's so simple to make and its easy to freeze too. Don't freeze it all together though as it tends to stick in big chunks - it's best to portion it up in bags.
I add spring onions, garlic clove, carrots and parsley to the cauli, season it and add a glug of olive oil and whizz it up in a food processor. I portion it up, freeze it and take it out as I use it. Its so simple and only takes minutes to cook.
For a super 'Green Mix' you could do this with Broccoli, cabbage and spring onions whizzed together too.
INGREDIENTS
1 Cauliflower
1 x carrot
1 bunch of spring onions
small bunch of parsley
garlic clove
salt
pepper
METHOD
Roughly peel and chop up the cauliflower, carrots, spring onions, parsley and garlic and add to the food processor. Add salt and pepper to season and a glug of olive oil and whizz.
To cook, add a small bit of oil to a frying pan and add the cauli rice, spread out evenly and cook for 3-4 minutes on a high heat. Stirring to ensure it doesn't burn.
Alternatively, you can cook on a baking tray in the oven on 190/200 for 10 minutes.
