Rainbow Mezze

This is such a lovely simple, little ditty, so quick, healthy and filling.

The ingredients can be swapped around to use up what's in the fridge too.

This is a great veggie lunch option.

Whenever we make changes to a diet, it's when we get hungry that we can get caught out.

It's lunch time and you're starving, poor on time and out of imagination so you fall back to old unhealthy eating habits because it seems easier.

This is why this is such a good dish - it works just as well packed in to a lunch box as it does plated up.

The ingredients all keep well and don't lose flavour... and can be rustled up in minutes in the morning or at lunch time.

This is a great plate of foods to snack on if you are doing a sugar detox (minus the bread!).

Making sure you have plenty of tasty things to nibble on is important when you first quit sugar as you need to make sure you don't ever get too hungry and make a bad food decision!

For this, I used carrot, spring onion, sun-dried tomatoes, pickled gherkins, yellow pepper, hummus with a tablespoon of harissa and a slice of sour dough bread.

They could just as easily have been substituted with olives, tomatoes, cucumber, taramasalata, pesto, red onions, pickled onions, ham, cheese...

It is so easy to make a varied, tasty quick and easy lunch like this one that's packed with protein, vitamins and fibre.

INGREDIENTS

3 x Spring Onions

1/2 Yellow Pepper

7 x Mini Pickled Gherkins

1 x Carrots

6 x Chopped Sun dried Tomatoes

3 tbsp Hummus

1 tsp Harrisa

I small slice of sour dough bread (optional)

METHOD

So simple - just peel and chop up your veggies and plate them up.

Spoon out the sundried tomatoes, hummus and harissa and off you go.
